Gone… fingers crossed

I think we are past the worst of the rash/virus attack. Miss Delightful seems to be getting better each day, she was almost back to her happy little self today! We have finished one lot of her medicine and we have another day of her antibiotics, so we are hoping that the rash doesn’t come back without the help of the medicine!

I haven’t really gotten back into the swing of blogging yet. Miss D and I have been enjoying spending time together and I have been busy creating while she sleeps. Maybe next week I’ll get back into things properly!

The rash didn’t leave us alone like we hoped! In fact it got worse and we spent all day Sunday at the Children’s Emergency Department at the hospital. They were fantastic and we were so glad to be in their care.

We arrived just before 9am, by 10am we were in a cubical and had been seen by a nurse, a doctor, her boss and his boss… 3 levels of specialists! They all agreed that it was not a food allergy, it was in fact an immune system reaction to a virus. Basically Miss D had a virus in her body and instead of her immune system helping it was in fact “holding hands” (doctors words) with the virus. This meant that her poor little body was working extra hard, and therefore broke out in a rash. By 11am we were in our own room and were waiting for blood tests to be done. According to the doctor, this type of rash can be on the outside of her body and on the inside, so they wanted to check her kidney, liver and lungs to make sure she was ok. The blood tests were horrible, it’s not fun holding your screaming child down… but we all survived. Then around 1pm we went off to have a chest x-ray done, that was equally distressing. This time I had to hold her still by her arms while they tried to get a clear enough picture of her lungs. We were all happy to head back to our room for a while. The longest part of the day was from 1pm – 6:30pm where we sat around waiting for her to pee in a bag. They needed a urine sample to test her kidneys, but of course this was the day she had remarkable bladder control! By 3:30pm she fell asleep in my arms… we thought she would relax enough and we would be fine, but sadly that wasn’t the case! By 6pm we were starting to talk about how the night would play out, thinking we were not going to be heading home. But I checked her nappy at 6:30pm and she had finally peed! I raced to find the nurse and exclaimed far too enthusiastically that “Miss D had peed”! I’m sure the doctors thought I was a mad woman! Then we just had to wait for the urine test and were given the all clear. There were a small amount of spots on her lungs so she has an antibiotic to take to clear up her chest infection, but her bloods and urine came back perfect. So no other infections, thank goodness!

We got home just after 7:30pm, got Miss D into bed and crashed on the couch. It didn’t take long for Miss D to fall asleep, and Mr Wonderful and I were not far behind her.

Today we stuck close to home, she is not contagious but her immune system is not running at 100% so we don’t want to take any risks. The rash has not disappeared completely but she is looking much better. Lets hope that tomorrow brings even more health!

Home again

My whirlwind trip to California is over. I got home at 8am yesterday morning. I had a FANTASTIC time!! I am amazed that I got to see so many of my awesome friends and squeezed in a good amount of shopping too.

I am completely shattered though, I didn’t allow myself to feel the effects of jet-lag when I got to California, but I sure am now! I managed to get almost 8 hours sleep on the plane coming home, which helped me to survive my day yesterday. I got home at 8am, and Mr Wonderful was out the door to work at 9am! Then at lunch time Miss D broke out in a massive rash (head to toe) and we ended up spending three hours at the doctors being observed. She is doing ok today, the rash is still there but we think it is going down. Hopefully some drugs and a good sleep tonight will get rid of it completely!

For now, I am off to bed… fingers crossed we have a nice quiet night and all wake up feeling refreshed!

My bags are packed and the shuttle is coming to pick me up in a few hours! I can’t believe that I am actually just about on my way to California! :)

California… here I come!

I have to be one of the most planned, organised and prepared people I know…. and I never do anything spontaneous! I even think about where I will park when I go out places.

But today I did something crazy, exciting and completely ridiculous! I booked tickets to California! Air New Zealand had $600 return flights from Auckland to Los Angeles… the only catch, I leave on Sunday! 2 days away people!! And I am only in CA for 4 nights!

So I booked my tickets at 2pm and by 3:30pm I had a place to stay and a car to borrow! I am so incredibly excited and a bit nervous at the same time. I get to see my brother and sister-in-law, I’m staying with one of my best friends and I hopefully will get to see lots of my High School friends too!

Tomorrow’s job is to pack, although since it’s summer I wont take much. And then I need to make a shopping list… and then I need to remember to breath!

This is the first time I will have been away from Miss Delightful for longer than a night… but she is in good hands. Mr Wonderful is a fantastic father, and we have some lovely friends who will look after her during the day so he can keep working. I just can’t get over the fact that I get to have a little holiday AND it’s in California!

All of this means that I probably wont be blogging for a week… I will be having too much fun shopping, enjoying the warmth and catching up with great friends! I’ll be back in touch sometime next weekend!!!

Chargrilled Chicken Wraps

This weeks new recipe was absolutely delicious!!

We made Chargrilled Chicken Wraps, following a recipe we found at Food In A Minute but we made a few changes to ours.

Ingredients

2 red onions
2 pepper
2 courgette (didn’t buy this as they are too expensive at the moment)
1 Tbsp oil
4 Tegel Chargrill Style Chicken Breast Steaks (we used normal chicken breasts, grilled them with a garlic salt rub)
1/2 cup Wattie’s Bit on the Side Cracker Cranberry Sauce
6 tortillas
1/2 cup sour cream or mayonnaise
6 lettuce leaves

Directions

1. Place the sliced onions, peppers and courgettes on a foil lined tray and brush with oil. Place the frozen Tegel Chargrill Style Chicken Breast Steaks on a second foil-lined tray.
2. Fan bake on the top at a 180°C for 12 minutes. Turn the vegetables and chicken and cook a further 12 minutes until cooked.
3. When cooked put the vegetables into a bowl. Cut the chicken breast steaks into thin slices and add to the bowl with the Wattie’s Bit On The Side Cracker Cranberry Sauce and toss gently.
4. Warm 6 tortillas in the microwave on high power for 30 seconds and then spread with sour cream or mayonnaise and top with a lettuce leaf if using. Spoon equal amounts of the filling on top and roll up.

Serve warm.

Here are the changes we made: we completely forgot to grill the vegetables so we fried them quickly in a pan with a little oil. We cooked our chicken on our George Forman Grill.

And again I will say, they were fantastic!! We will be making these again and again and again!!
