Time

I know I said I wouldn’t be posting much… but I just had to share this! I was praying tonight that God would help me manage my time wisely because I feel like I have 50 million things to get done each day… and then this was in my inbox! Thank you God for words of wisdom and for speaking to me when I need to hear something!

Dear Brilliant Girl,

Life is good. Life is difficult. Life is interesting. Life is confusing. Life is crazy. Life is fun. Life is wild. Life is colorful. Life is unpredictable. Life is a gift. Life is a test.

Life is about one million other things too, isn’t it?

Now, with all of that being said, dear girl, why would we ever think that we could have it all figured out, that we SHOULD have it all figured out, and that every single day would not be filled with brand new challenges that we never expected?

Please don’t beat yourself up EVER about not having it all figured out, about not knowing what is going to happen next, about not knowing exactly which road to take every time there is a choice to take a new road. Just enjoy it.

It’s all about the journey, the adventure, the lessons, the relationships, the surprises, the discoveries, the giving, and all of those things can happen every single day without knowing exactly how they are going to happen. So the most wonderful thing to do, would just be to TRUST that it will happen exactly as it should, exactly where it should, with exactly who it should.

Do your best, then just trust and enjoy. Life is meant to be enjoyed. Please choose to enjoy it.

Missing

I have been missing on my blog for almost a week now… we spent a fantastic 4 days enjoying this:

We went to Taupo with my parents for a long weekend and it was just amazing.

I will write a proper post soon… I’ve spent the day doing loads and loads of laundry, grocery shopping and unpacking bags. Sometime I’ll get a few minutes to do some real blogging!

Be Natural – Cereal Review

A few months ago I was lucky enough to trial and review some yummy cereal from Be Natural.

They have just bought out a new flavour and again I was sent a box to sample! The new flavour is Manuka Honey and Spice Clusters… and it is delicious!

Mr Wonderful and I have been enjoying it for breakfast over the last few days.

The first taste I noticed was a bit of cinnamon, and then I got to the flakes and I could taste the honey. It was a lovely combination! I have been sent a couple of coupons and I think I will be using them to buy some for myself!

Note: I have not been paid to do this review, I volunteered and was sent the box. I did not need to say it was yummy, which means that it really was!

Week 7

Here is my week in review:

God: This week has been filled with prayer, I have been continuing reading Acts, but I found out that a friend from High School was undergoing some scary medical stuff. Last I knew she was having surgery, but I haven’t had any more updates, so still praying for a speedy recovery!

Husband: Valentine’s Day was this week… I decided this year that I was going to put a little extra effort into the day. You can read about what I did over here.

Miss Delightful: Miss D has had a busy week, she had her first 2 day week at Kindy, we had a couple of play dates and lots of early nights (she was rather tired).

Friends: Miss D and I went on a couple of play dates, which is always nice for me to catch up with Mum’s as well. And we walked to Playgroup with a neighbour this week as well.

Eating: This week I was a bit adventurous. Mr W got me a pasta maker for Christmas, so I had my first play with it. Our pasta dinner was yummy! I made way too much pasta though, so I might have to halve the recipe next time, we also made delicious pizza one night too.

Exercise: This week was hard for running, week 4 saw me jump up from 2-3 minute runs up to 6 minutes! At first I thought I was going to die, but by the 3rd run of the week it was slightly easier. This coming week is going to be even harder, but I am over halfway. I am still frustrated with the weight, I’m not seeing any decrease on the scales… but I have lost 3cm from around my waist and hips!

Creative: I feel that I haven’t done anything creative at all this week. I think we were barely home this week, and the time we were at home was spent doing a million jobs. Hopefully this coming week will be calmer (not looking promising though)!

Right.. I’m off to bed now… I’ve been super tired today so I’m aiming for an early night!

Chicken and Spinach Pizza

This is nothing new… but it was a first time dinner for us! Tonight we made a Chicken and Spinach pizza… it was yum!

Mr Wonderful is very excited that there are a few slices left over for his lunch tomorrow!

Here is the recipe I used if you want to try it:

Chicken & Spinach Pizza

Pizza Ingredients
• 1 package ready made pizza crust (I made my own pizza base)
• extra virgin olive oil
• 1/4 cup seasoned tomato sauce (I used tomato paste because we had some in the fridge)
• 1/3 package (10oz) frozen whole leaf spinach, thawed and squeezed dry
• 2 cooked chicken breasts, sliced
• 2-3 green onions, chopped
• 10 grape tomatoes, halved
• 2 oz. Romano cheese, thinly sliced
• 1 cup Mozzarella cheese, grated
• salt and pepper

Preheat oven with pizza stone to 210ºC/425ºF.
To build the pizza:
1. Drizzle 2-3 teaspoons extra virgin olive oil on crust, lightly coat all the crust evenly with fingers, then sprinkle with pepper.
2. Spread around tomato sauce, don’t feel like you have to coat the whole crust, just here and there.
3. Layer on spinach, chicken, tomatoes, onions. Sprinkle on salt and pepper, being sure to hit the spinach and tomatoes with salt.
4. Lay on slices of Romano on chicken, and spread Mozzarella all over.
5. Bake on pizza stone 7-9 minutes. Allow to cool a couple of minutes before serving.

Note: We just used normal cheese to save money, it tasted just fine.. but if you wanted to be fancy I’m sure the Romano and Mozzarella would be tasty!
