Pikelets

Miss Delightful had pikelets for lunch today! She really enjoyed them!

I gave her one and a half pikelets with a little bit of margarine on them. And she had a bit of pear and nectarine as well. I was tempted to copy her, it looked really yummy!

The recipe came from: The Happy Baby Cookbook by the Australian Women’s Weekly. This book is no longer being sold as it was recalled last year. Some of the food for pregnant women was not safe! But the baby food is perfectly fine (apparently!)

Anyway… here is the recipe:

Ingredients:
1 cup (150g) self-raising flour
2 tablespoons caster sugar
1 egg, beaten lightly (I just used the egg yolk)
3/4 cup (180ml) milk (I used formula as I am not sure if Miss D is allowed milk yet!)

Directions:
1. Combine flour and sugar in bowl; gradually whisk in egg and enough milk to make a thick, smooth batter.
2. Drop tablespoons of mixture into greased heated heavy-based frying pan; cook until bubbles begin to appear on surface, turn, brown on the other side.
3. Serve with yogurt and pureed fruit or maple syrup. (I just put some margarine on them)

What is your baby eating?

Does anyone have any suggestions for what I can feed Miss D?

She is having 3 meals a day. This is generally what she has:
Breakfast – 1 weetbix with pureed fruit on top
Lunch – Marmite toast, avocado, banana, or some other fruit, or potato, kumera or pumpkin.
Dinner – I have a beef mix, a chicken mix and rice risotto at the moment, or she has mashed potato, kumera or pumpkin with some sort of vegetable.

I just don’t want her to get bored of food cause its the same every day.

Any ideas would be great!!

Homemade Rice Risotto

I have been trying to come up with different food to feed Miss Delightful… I was getting bored of potato and I wasn’t even the one eating it! So I found a recipe for Rice Risotto in one of my baby food books! It was very easy to make and smells really good! Miss D seems to like it, she has had it for dinner twice now. But sometimes I think she will eat anything we offer her! Which I guess is a very good thing!

Anyway… here is the recipe if you want to make it yourself:

Red Pepper Risotto
You will need:
50g long grain rice
300ml formula milk
75g red pepper
75g courgette
50g celery

Directions:
1. Place the rice and milk in a saucepan and bring to the boil. Simmer uncovered for 5 minutes.
2. Cut the vegetables and add to the rice. Bring to the boil, cover and simmer for about 10 minutes or until rice is soft.
3. Puree if you wish. Suitable for freezing, or use within 24 hours.

As you can see, there are not many steps! And I guess you could substitute the formula for water if you wanted to.

Miss Delightful absolutely LOVES her food! This means that we have been using a lot of jars of baby food.. so today I did some cooking!
She now has a beef, kumera and carrot mix and a chicken and parsnip mix. The beef one actually smelled yummy!

Lemon Cookie Recipe

Here is the recipe for the scrummy cookies:

Ingredients:
3 cups all-purpose flour
1/2 teaspoon baking soda
dash of salt
1 1/2 cups sugar
3/4 cup (6 ounces) butter, room temperature
1 large egg
1/4 cup lemon juice
2 tablespoons finely grated lemon peel

Directions:
In a mixing bowl, stir together the flour, baking soda and salt. In a separate bowl, beat together 1 cup of the sugar with the butter until light and fluffy. Beat in the egg, lemon juice and zest, then gradually blend in the flour mixture. Form the dough into 2 rolls about 2 inches wide and 7 inches long. Wrap the rolls in waxed paper and refrigerate until firm, about an hour.
Preheat the oven to 190°C (350°F).
 Unwrap the cookie dough and cut into slices about 1/4-inch thick. Sprinkle slices lightly with remaining sugar and place on an ungreased baking sheet. Bake until lightly browned around the edges, about 12 minutes. Cool the cookies on a rack and store in an airtight container.
 Makes about 5 to 6 dozen lemon icebox cookies.

Note: I chose not to sprinkle the cookies with sugar before baking since I am going to decorate them. I think I would sprinkle if I was leaving them plain.

Miss Delightful only slept for 30 minutes… so I only just got a chance to bake my cookies. The extra 2 hours in the fridge doesn’t seem to have done any damage! They sure taste good!
I cut them out in heart shapes since it’s valentine’s day on Sunday, but next time I think I will leave them as circles. The dough heats up quickly when you roll it out so they become very soft and sticky. However, it didn’t change the way they baked!
Now that Miss Delightful is asleep again I am going to attempt to decorate them somehow! I’ll add the recipe next!
